Ingredients

  • Brinjal, big in size: 1 in no,
  • Spring onion: 2 ½ katoris,
  • Garlic, chopped: 2 cloves,
  • Oil: 2 tsp,
  • Salt: from the prescribed daily allowance,
  • Turmeric powder: ½ tsp,
  • Red chilli powder: 1 tsp,
  • Dhania jeera powder: ½ tsp,
  • Cumin seeds: ½ tsp,
  • Asafoetida: 1/4th tsp

Directions

  • Wash the brinjal and clean it and grease it with few drops of oil.
  • Roast it on a medium flame from all sides.
  • Keep roasting till it turns soft. Once done, allow it to cool.
  • Remove the skin of brinjal and smash it.
  • Now take oil in a pan, add cumin seeds and allow them to splutter.
  • Now add asafetida, and then add garlic and spring onion. Saute till onion turns pink.
  • Now add smashed brinjal, salt, turmeric powder, red chilli powder and dhania masala powder.
  • Mix well for 5 mins and serve hot.
